An intimate, brick-walled Paddington restaurant run by young gun chef Josh Niland, this place is a window into the finest seafood Australia has to offer. With a Zen-like approach to preparation and cooking, Niland’s seafood dishes are pared back but perfectly executed, like a 10-point pike dive rather than a triple backflip with sloppy turns. Don’t expect a cascading seafood platter or greasy fish and chips. Instead, you’ll find things you may have never considered before: fish liver, fish heart, or something cured or with scales on it. But trust this chef—everything is bloody delicious. And you must finish with the lemon tart.
